Engaging in Research that will Ensure Food Quality and Safety

Researchers at the University of Maryland Eastern Shore are focusing on the prevention of food borne illnesses caused by the ingestion of contaminated seafood  from the Chesapeake Bay and its estuaries.  The scientists are collaborating with the Maryland crab processing industry in seeking valuable information about incidences and sources of Listeria monocytogenes in crabmeat and crab processing plants.  These researchers are also seeking information about the occurrence of Vibrio parahaemolyticus  contamination in Asian oysters.  These studies will assist health and regulatory officials to make decisions related to the release of Asian oysters into the Chesapeake Bay.
