The Tuskegee University Nutrition Outreach Program (TUNOP) is concentrating on heart disease. Working in local churches and community centers, men and women participated for twelve weeks and received significant benefits of reduced weight, high blood pressure, and other reductions in cardiovascular biomarkers.
Additionally, students are engaged in food microbiology studies. For example, studies are underway to test the antimicrobial activity of chitosan. Solutions of chitosan are being used to coat strawberries for better preservation.
