New Health Food: Boiled Peanuts

Alabama A & M University researchers in the Department of Food and Animal Sciences have reported that boiled peanuts produce up to four times more chemicals that help protect against some potentially fatal maladies-among them cancer and heart disease-than raw, dried or oil-roasted nuts. According to the food scientists involved in the study, boiling is a better method of preparing peanuts in order to preserve the phytochemicals.
