Gourmet Dining 2014PRINCESS ANNE, MD - (Sept. 17, 2014)-Foodies are in for a treat this fall at the University of Maryland Eastern Shore.  The school's Hospitality and Tourism Management program presents its annual Gourmet Dining Series with dinners Oct. 3, Nov. 14 and Dec. 5.  Tickets are now on sale.

Students in an advanced food production course are responsible for everything from planning the menu, ordering the ingredients to the food preparation.

"Planning and management skills are emphasized as much as the culinary skills," said Ernest Boger, director of the program.  "The students have come up with an exceptional menu for the upcoming series."

The series begins Oct. 3 with a tribute to Eastern Shore seafood.  An Armagnac creamy seafood bisque and lobster, avocado and blue cheese martini appetizer make way for an entrée with blue crab and breaded mahi-mahi with Niçoise olives.  Croquette potatoes with Gruyere cheese and salted cod accompany the entrée.  White couverture chocolate pudding with passion fruit sauce is the finale.

November's dinner on the 14th salutes U.S. military service members and veterans.  The meal starts off with a cream of collard green soup and a bourbon and pineapple mallard duck breast appetizer.  Roasted filet mignon and jumbo stuffed shrimp serves as the entrée with individual passion fruit cheesecakes as the dessert.

The final dining experience Dec. 5 is donned "Celebration" and includes an hors d'oeuvres reception with a carving station.  Shrimp cocktail, smoked salmon, caviar, gourmet chicken drummers, Cajun crab balls and smoked pork loin are among the items.  For the dinner portion of the evening, a seafood corn chowder proceeds Bombay Curry lobster and a roasted Southwestern T-bone steak.  Potatoes with rutabaga and carrot batons compliments the entrée.  The meal is topped off with assorted petit fours.

Tickets are $50 per person and can be purchased in advance, Monday-Friday, from 9 a.m. to 1 p.m. in the Richard Henson Center, Room 2100.  Checks or money orders made payable to UMES are accepted.  Seating time is 7 p.m.  Call 410-651-6563 for more information.
