class=\"wp-image-2122\"\/><\/figure>\n<\/div>\n\n\n<p class=\"wp-block-paragraph\">PRINCESS ANNE, MD-(August 12, 2021)-Mirroring the change in demographics on Delmarva, there is a growing demand from a diverse group of consumers for ethnic specialty crops that they prefer for dishes with which they are accustomed.&nbsp;&nbsp;<a href=\"https:\/\/www.umes.edu\/Extension\/\">University of Maryland Eastern Shore Extension<\/a>&nbsp;is working to help growers meet that demand and to educate consumers new to those crops on their nutritional value and how to enjoy them.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">UMES Extension is offering an Asian vegetable online cooking class August 28 and an on-site workshop for growers and gardening enthusiasts August 21.&nbsp; Both begin at 10 a.m. and are free, but require advanced registration at&nbsp;<a href=\"http:\/\/www.umes.edu\/SANS\/Events\">www.umes.edu\/SANS\/Events<\/a>.&nbsp; The workshop will be held on the UMES Farm located on College Backbone Road near the Food Science and Technology building.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\u201cThese vegetables&nbsp;are rich in nutrients and are perfect for crop diversification&nbsp;at small farms,\u201d said Dr. Naveen Kumar Dixit, an assistant professor of horticulture and UMES Extension specialist. &nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Gail
